Brownie Balls

Ingredients
  

  • 1 cup oat flour
  • 1/2 cup dates medjool are best
  • 1 tbsp maple syrup
  • 1/2 cup nut butter
  • 1/4 cup cacao powder (or almond flour for cookie dough flavor)
  • 1 serving protein powder
  • ~1/4 cup milk of choice
  • Pinch salt
  • 1 tsp vanilla extract
For chocolate coating:
  • 1/3 chocolate chips (or chopped chocolate bar)
  • 1/2 tsp coconut oil
  • flakey salt

Method
 

  1. Soak dates in hot water for at least 30 minutes, until softened. Add to a food processor or blender with milk and maple syrup. Blend until smooth.
  2. Add the rest of ingredients (except the chocolate coating ingredients) to the food processor or blender. Blend until a thick dough-like consistency forms.
  3. Roll into balls. Put on a parchment lined tray and put in the freezer for a few minutes while melting the chocolate.
  4. Melt chocolate chips (or bar) in the microwave, using 30 second increments and stirring in between.
  5. Take the brownie balls out of the freezer and coat each ball with the melted chocolate. Top each one with flakey salt before the chocolate completely hardens.
  6. Store covered in the fridge or freezer.
