To make the mocha sauce combine cacao powder, maple syrup and vanilla in a mug until it's a thick paste. If you are using any of the optional add-ins then they can be incorporated now as well. Add a splash of hot water if needed.
Brew the espresso shots or pour the hot brewed coffee over top of the mocha sauce. Mix or whisk together until the chocolate is fully incorporated.
Use a blender or a hand frother to combine the collagen powder with the milk. Then steam or heat the milk and pour over the top of the espresso.
Add your toppings of choice and enjoy!
