As a barista who loves chocolate and a sweet treat most days, this maple mocha latte is my go to drink that is delicious, but also packs a punch of nutrients and comes without the usual blood sugar or caffeine crash.

This cozy beverage can be made hot in the winter for a warm cup of chocolatey goodness or iced in the summer for a refreshingly cold treat. This maple mocha latte includes ingredients that can help keep your blood sugar balanced and your hormones regulated. In addition, it’s so easy to make, is customizable, delicious and has so many benefits for your mind and body.

Ingredients for the maple mocha latte:
Cacao powder – raw form of cocoa powder that is rich in antioxidants and flavonoids. Rich in minerals, especially magnesium. It has been shown reduce oxidative stress, improve cognition, help with mood, regulate immune system and decrease inflammation.
Pure maple syrup – packed with antioxidants and minerals such as manganese, potassium, calcium and zinc.
Brewed espresso – can also use instant coffee or regular brewed coffee (or even leave out entirely for a maple hot chocolate). I like to buy beans from local coffee shops and grind them myself (many local shops will grind it for you if needed). Another option is to choose a high quality mold-free brand like Bulletproof or Purity Coffee.
Milk/cream of choice – I like either raw milk, cashew milk or coconut milk (no gums or fillers) – provides a source of healthy fats
Vanilla – paste or extract – for extra flavor
Collagen powder – protein that can potentially help balance your blood sugar. I love the brand Perfect Supplements.
Ceylon cinnamon – can help balance blood sugar and keep it more stable throughout the day, has anti-inflammatory properties and can help curb cravings.
Optional add-in ingredients:
Dark chocolate chips – can add a deeper chocolate flavor
Ghee or MCT oil – healthy fat sources that can help stabilize blood sugar and keep sustained energy throughout the day
Raw egg yolk – make sure it’s good quality (pasture raised and from a trusted source), great source of choline and other nutrients.
Optional toppings:
Sprinkle of cacao powder, coconut sugar or cacao nibs
Homemade whipped cream or marshmallows

Equipment:
Blender or hand-held frother
Espresso machine or coffee maker
To make the mocha sauce:
This mocha sauce can either be prepared as a single drink or in advance to have for the whole week. Once it’s made, you can just pour your coffee over top.
All you have to do is combine cacao powder, maple syrup, vanilla extract and a splash of hot, almost-boiling water in a heat-safe glass jar or container. Mix it well and that’s it!
To make the drink:
Make the maple mocha sauce above. Add desired amount to mug.
Brew espresso over the top. Mix or whisk to combine.
Mix collagen powder into milk of choice (I either use a handheld frother or a small blender for this).
Steam the milk or heat on the stove or microwave.
Add the milk to the mug with espresso.
And that’s it! Relax and enjoy!
To make an iced maple mocha latte:

It’s pretty much the same process. Mix the espresso with the maple mocha sauce.
Mix the collagen into the milk, but instead of steaming or heating it, add it straight over the expresso.
Add ice to the cup and pop in a reusable straw (I love glass ones)!

Maple Mocha Latte
Ingredients
For the mocha sauce
- 1 tbsp cacao powder
- 1 tbsp pure maple syrup
- 1/4 tsp vanilla extract or paste
To make the latte
- 2 shots espresso or brewed coffee of choice
- 1 cup milk of choice
- 1 scoop collagen powder
Optional add-ins
- 1 tbsp dark chocolate chips
- 1 raw egg yolk
- 1 tsp ghee or MCT oil
Optional toppings
- sprinkle cacao powder, coconut sugar, ceylon cinnamon
- homemade marshmallows, whipped cream
- dark chocolate chips, cacao nibs
Instructions
- To make the mocha sauce combine cacao powder, maple syrup and vanilla in a mug until it's a thick paste. If you are using any of the optional add-ins then they can be incorporated now as well. Add a splash of hot water if needed.
- Brew the espresso shots or pour the hot brewed coffee over top of the mocha sauce. Mix or whisk together until the chocolate is fully incorporated.
- Use a blender or a hand frother to combine the collagen powder with the milk. Then steam or heat the milk and pour over the top of the espresso.
- Add your toppings of choice and enjoy!
